Deba 140 mm – compact force to fish

The tall 45 mm single-sided ground blade and massive 6 mm back give confidence for filleting: from cutting off the head to guiding the knife along the bones and skinning. The shorter 140 mm blade is nimble on small and medium-sized fish, and the 193 g weight provides stable, controlled cutting in a single stroke. Deba – compact force to fish

The massive, high blade with a single-sided grind gives Debie stability and control when filleting: from cutting off the head to running the blade along the bones and removing the skin. The shorter 140mm blade is nimble on smaller and medium-sized fish, and the 6mm back ensures confident cutting despite its light weight.

* Wa handle – a traditional Japanese handle with a round/oval/earthing shape, usually made of wood and a lightweight cap. It is lighter than the Western handle (yo), giving the knife a more “frontal” balance, and the handle itself is easy to service or replace.

Application

Fish (filleting, portioning, skinning), seafood, small boneless poultry, harder vegetables. Not for cutting long bones, frozen foods, and leveraging seeds.

Maintenance

Wash by hand and dry immediately; store in scabbard/leaf/block. Sharpen on water stones (e.g., #1000 → #3000/6000). Avoid dishwasher and roller sharpeners.

Translation of the engraving (kanji on the wedge)

  • The oval seal at the top contains the characters 「喜久」.(Kiku – “joy / longevity”); it is the mark of the forge/brand.

  • Below, the vertical inscription 「本金」(honkin) – literally “real gold”; in the context of knives, it means the original/reliable quality of the series, not the gold material.
