Deba – power and control to fish

The 48mm tall blade and sturdy 7-mm back give that Deby characteristic confidence when working with fish: from slicing off heads, running the blade along the bones, to skinning in one smooth stroke. The single-sided(right-handed) cut “sucks” the edge to the skeleton, and the classic wa* handle with metal cap provides a comfortable grip and natural balance on the blade. This is a tool for special tasks – when precision, strength and clean cutting count.

* Wa handle – traditional lightweight Japanese wooden handle (round/oval/octagonal) with cap at the throat. Lighter than “western/yo”, it shifts the balance towards the blade, promotes pinch grip, reduces hand fatigue and facilitates replacement.

Fish (filleting, portioning, skinning), seafood, small boneless poultry, tougher vegetables.
Do not use for cutting long bones, frozen foods or for undermining.

Maintenance

Hand wash only and dry immediately. Store in a scabbard/leaf/block. Sharpen on water stones (e.g. #1000 → #3000/6000). Avoid dishwasher and roller sharpeners.

Translation of the engraving (kanji)

Visible vertical inscription: 「勝成」.“Katsunari” (the name/name of a craftsman or forge; literally, “victory” + “to achieve/become”).
