Japanese Gyuto Knife 23.2 cm NJG019

Price: 1.150,00

Gyuto – fast, light, precise.

A slender 3mm blade with a pronounced tapper cuts through products “at once,” and the tip gives surgical control. The 232mm length is the golden mean: long reach without sacrificing maneuverability. The yo handle on a full bolster and the lack of a bolster mean a light, well-balanced whole and a comfortable sharpening all the way to the guard – ready for any movement from swinging to long cuts.

Product Information

Gyuto – a slim universal that “does everything”

The 42 mm tall, 232 mm long, 3 mm thick blade combines the precision of Japanese geometry with the everyday convenience of a chef. A pronounced taper from spine to tip and a light weight of 188 grams give quick entry into the product and sure control for chopping, dicing and long cuts. The western yo handle on a full shank stabilizes your grip and allows you to work comfortably for hours.

Key strengths

  • Profile gyuto – a versatile tool for meat, fish, vegetables and herbs.

  • Tip with clear tapper – precise point work and skin incision.

  • 3 mm back + 188 g – fast, light cuts without “jamming” in the product.

  • 232 mm blade length – the perfect balance between reach and control.

  • Full shank yo* handle – secure grip, durability and easy maintenance.

  • Without a bolster – less weight and more comfortable edge sharpening up to the guard.

* Explanation:
Handle yo – “western” design: two facings riveted to the full shank; solid, stable, easy to service.
Bolster – a metal “collar”/thickening between the blade and handle, found on many European knives; adds weight and protects the fingers, but makes it difficult to sharpen right at the heel. This model does not have a bolster.

Application

The everyday chef’s knife: from onions, herbs and root vegetables, to meats and fish, to long slicing and precision cutting at the board.

Maintenance

Hand wash and dry immediately. Store on a strip, in a scabbard or block. Sharpen on water stones (e.g. #1000 → #3000/6000). Do not use for bones, frosting or undermining.

Translation of the engraving (kanji on the wedge)

The face shows a vertical engraving, in which one can read, among other things:

  • 「登録」(tōroku) – “registered [trademark]”.
