Key strengths

  • Ultra-thin 1 mm blade – “drives” into the product effortlessly.

  • 162 mm blade length – ideal for everyday shredding and precision cutting.

  • Height of 38 mm – good knuckle control on the board, yet handy profile.

  • Lightweight (105 g) and agile – less hand fatigue for long slicing.

  • Handle yo*– secure grip, classic rivets, good ergonomics.

  • Stainless steel “DP STAINLESS STEEL” – easy care, corrosion resistance.

* Yo handle – a Western (European) type of handle with a full or half-full shank and rivet-fastened facings.
* Bolster – a metal “foot” between the blade and the handle that improves grip and protects the hand; this model lacks a bolster.

Application
Vegetables of all kinds: chopping herbs, cabbage and lettuces, julienne, payard, thin slicing; fruits without hard seeds. Not for bones, frozen foods and undermining.

Care
Hand wash, quick dry. Store in a scabbard/leaf/block. Sharpen on water stones (e.g. #1000 → #3000/6000). Avoid dishwasher and roller sharpeners.
