Nakiri is your veggie maker: the 1-millimeter ridge cuts without resistance, and the 115 gram weight allows you to chop long and comfortably. The tall blade glides steadily along the board, and the traditional wa handle with water buffalo horn cap gives a natural “on blade” balance. Even slices of tomato, a springy julienne of carrot, a cloud of chopped chives – when pace matters, this knife sets the rhythm.

Nakiri – lightness and speed on vegetables

The slim, straight nakiri blade speeds up all “board” work: shredding, dicing and slicing with full control. The 178mm version is exceptionally maneuverable – the 1-mm back and 115 grams of weight enter the product without resistance, and the 40mm high head guides evenly with the entire edge. The traditional wa handle with water buffalo horn cap adds lightness and natural “on-blade” balance.

Explanation: Wa handle – a traditional Japanese lightweight, usually wooden handle mounted on a bolt. It has a water buffalo horn ferrule that reinforces the bolt entry and increases durability, and the low weight moves the balance closer to the blade.

Application

Vegetables and herbs: from cabbage and pumpkin (without seeds/shells) to tomatoes, cucumbers, onions and chives. Do not use for bones, frozen or hard seeds.

Maintenance

Hand wash and dry quickly. Do not soak horned parts or expose to high heat. Store in a scabbard/leaf/block. Sharpen on water stones (e.g. #1000 → #3000/6000). Avoid the dishwasher.

Translation of the engraving (kanji on the wedge)

「清光」. – read. Kiyomitsu / Seikō. This is a craft signature used by various workshops.
