Santoku – All-purpose Japanese-style kitchen knife

Santoku – a sure-fire “workhorse” for everyday chopping, slicing and dicing. The slim 2mm back and balanced rivet handle give great control, while the high 42mm profile provides finger clearance and stable board guidance. The gently spun tip facilitates precise movements, while the flat part of the edge shines for push cut and chop techniques. On the back you can see the lamination line – the blade works sharply and springily at the same time. The whole thing weighs 126 g, so the knife is sturdy, but still fast in the hand.

Kanji markings on the wedge

  • 本割込 (hon-warikomi) – literally, “true wedging”: a hard steel core is inserted into the split facings and forge-welded into one piece. The core is responsible for sharpness and retention, while the sides cushion the work and increase stress resistance.

  • DP処理 (DP shori) – “DP treatment / special heat treatment”. In practice, it means a multi-stage heat treatment (e.g., quenching + double tempering + sometimes cryogenic treatment) aimed at stabilizing the structure of the steel, reducing residual austenite and combining high hardness with resistance to chipping.

  • – reads / noboru, meaning “to climb / ascend (up)”, sometimes also used as a workshop/series sign.

  • Vertical signature ending with (“made / done by”).
