Product Information

Santoku – a classic, agile “tri-tasker”

Designed as a multipurpose for home and professional kitchens. The santoku’s geometry combines a gentle curve of the edge with a longer, flat section – great for swinging and quick “push-cuts.” The tall head guides your hands safely over the board, and the sturdy yo handle with two rivets gives you a secure grip and neutral balance for pint and hammer grip.

Key strengths

  • Slim, agile head: back only 2 mm – lightweight, fast entry into the product.

  • Height 44 mm – comfortable clearance under the knuckles when chopping.

  • Versatile santoku geometry: efficient chopping, slicing and slicing.

  • Handle yo (western), riveted – durability and stability in the wet.

  • Solid bolster at the root – additional hand protection and smooth transition to the handle.

  • Working matte finish – less visible traces of work, easier care.

Markings on the wedge (translation)

  • 本割込 (hon-warikomi)* – traditional hard core lamination in a “sandwich” of facings.

  • DP処理 (DP shori) – “DP machining”; an industry abbreviation for process/machining.

*Hon-warikomi (本割込) is the traditional way of laminating a wedge: a hard core (hagane) is “wedged” and cupped between two layers of more malleable steel/iron (jigane). The result is a three-layer blade

Glossary
  • Handle yo – a Western type of handle with a full or half-full shank, riveted with facings (here: wooden). Provides stability, easy control and somewhat “European” knife handling.

  • Bolster – a thickening/protective element between the blade and the handle (here metal) that protects the fingers, improves balance and smooths the transition between steel and facings.

Additional information

It’s a utility knife – the fine machining marks, patina or microscratches are natural and highlight the craftsmanship of the blade. Wipe dry regularly and sharpen on stones to maintain the typical santoku cutting aggression.
