All-purpose Japanese-style knife

Santoku – a sure-fire “workhorse” for everyday chopping, slicing and dicing. The slender 2mm back and balanced riveted handle with a gut provide great control, while the high 48mm profile gives comfortable finger clearance and stable board guidance. The gently spun tip facilitates precise movements, and the long, flat part of the edge shines with push cut and chop techniques. The satin finish of the blade reduces product sticking and enhances the raw, workshop aesthetic. The overall length is 292 mm, weighs 150 g and remains fast to work with, yet secure in the hand.

Inscriptions/canji on the wedge – what they mean

  • 本鋼 (hon-kō) – literally, “true steel/carbon steel“; a quality formula referring to the material of the blade.

  • 関孫六 (Seki Magoroku) – “Magoroku of Seki“; refers to the sword-making tradition of the city of Seki in the former province of Mino. Nowadays used as a series/brand name by various makers in the region;

  • 上作 (jōsaku) – “higher grade/better qualityworkmanship“;

  • The square cartouche bears two characters; the first appears to be 銀 (“silver”/”gin”), which is sometimes used in the naming of the series (e.g. “Gin/Gingami line”).
